Puppy Chow, the organic way

One of my favorite things about moving to organic ingredients over the last few years, has been finding how easy it is to turn old comfort recipes into a version with better ingredients. And, guess what? They are usually just as good as the original recipe.
So while I wouldn't call some of these recipe transformations "healthy", splurging on these treats feels a little bit better when it's better ingredients.
This recipe is a favorite from childhood, probably a favorite from yours as well. I will disclose that the texture changes slightly on this one with the difference in the cereal. This could be a deal breaker (as it almost is for one person in my house), but it really doesn't bother me.
Ingredients:
1/2 cup natural creamy peanut butter
1/4 cup organic butter (we use salted)
1 teaspoon organic vanilla
1.5 cups organic powdered sugar
Directions:
Measure out cereal into a large bowl. Over medium low heat, melt butter and peanut butter in a small saucepan, stirring until well combined. Add vanilla. Add chocolate chips and stir until mixture is smooth, careful not to scald the chocolate. Immediately pour over cereal and toss until cereal is well coated. Transfer coated cereal to a large bag, add powdered sugar, and shake until cereal is coated well. Pour cereal out onto parchment paper and allow to cool before storing in an airtight container.
